Nutritionist Intern

Position Summary:

The Freshen Your Plate Project will advance health equity in Lincoln by increasing access to healthy food, specifically fresh fruits and vegetables, among individuals and families experiencing homelessness or who are on the edge of homelessness. A paid student intern from the Department of Nutrition and Health Sciences at UNL will work with kitchen staff and volunteer hunger relief teams to ensure every meal served at Matt Talbot increases a serving of at least one fresh fruit or vegetable.

Essential Job Functions

  • Contact Hunger Relief teams the week prior to their volunteering. Review their menu and see if they need MTKO to provide any food.
  • Facilitate outside agencies to come into MTKO to work with clients to improve their overall health.
  • Work with UNL extension to continue providing Nutrition Classes and explore new subjects for classes.
  • Prepare or assist with public relations materials such as volunteer brochures, newsletters, handbooks, and program descriptions, if applicable.
  • Perform any other related duties as assigned.
  • Adhere to all policies and procedures of MTKO.

Skills and Education

  • In progress of Senior Year or Graduate Program from an accredited college or university with a degree in a related field, such as dietetics, food and nutrition, health science, or clinical nutrition.
  • Ability to organize tasks and complete them in an efficient manner.
  • Communicate effectively, both verbally and in writing, with diverse audiences.
  • Valid driver’s license.
