Front of House Manager/Hospitality Intern

 

A unique summer opportunity, Camp Emerson is hiring a Front of House Manager (FHM) for Summer 2024. The FHM is responsible for the operation and cleanliness of the dining hall area before, during, and after meals and will report to the Head Chef and coordinate closely with the Camp Director. This position is ideal for a detail-oriented person passionate about the summer camp dining experience with an interest in food. The FHM will have a large impact upon the camp community and the opportunity to bring their ideas and passions to the role.

 

Core Responsibilities:

 

  • Oversee the operation and cleanliness of the dining hall area before, during, and after meals
  • Be the main liaison between the camp community and the kitchen staff
  • Supervise and assign roles to kitchen staff when they work front of house shifts
  • Provide feedback on the staff schedule to meet the needs of the dining hall
  • Supervision and execution of dining hall setup and breakdown throughout the summer
  • Coordination with program team around the use of the dining hall for evening programs, special events, and rainy-day activities
  • Proper labeling of areas around the dining hall which may include condiment stations, gluten free / dairy free buffet areas, pasta bar, toaster stations, cabin labels for each table, clean up station labels, etc.
  • Implement and supervise an in-meal clean up system. Evolve this system throughout the summer in coordination with the camp director.
  • Ensure snack offerings are distributed at appropriate times throughout the day
  • Adjust dining hall set up to match camp enrollment each session
  • Develop Pre / Post meal setup and clean up checklists for kitchen staff to follow
  • Ensure the dining hall is swept and mopped daily
  • Lead Dining Hall decoration for theme meals, color war, and family camp
  • Be present during meals and field questions from campers and staff
  • Attend and participate weekly kitchen staff meetings
  • This position will be asked to support the kitchen and camp in additional ways throughout the summer
